There are plenty of places that have a safe food list for gluten intolorance/coeliac’s

So far i have found this list on to be the biggest most comprehensive list i have seen so far

Chicken & Dumplin soup Gluten/ Dairy free

Over at Money saving mom, they posted a guest post from The Willing cook of Chicken & Dumplin Soup , I had to try it but with my twists

Gluten & Dairy Free Crockpot Chicken & Dumpling Soup

Soup Ingredients

  • 1 onion, diced
  • 2 cup frozen veg (my combination was carrots, peas, broccoli, cauliflower)
  • 8 portion of chicken
  • salt & pepper
  • 10 cups chicken broth (using my chicken stock cubes)
  • 10 small potato , peeled and washed and chopped (optional, i added this just to pad out the dish as it didn’t look enought for my greedy family)

Am yet to add the Dumplins but I have another recipe for dumplins which can be found here.

I used the same instructions from Money saving mom’s blog and just swapped in my substitutions.

Save your peelings

Ok, not quite your peeling but if you have any left over chunks of veg like the top and tails of onions ( not the ‘paper’ skin , carrots, parsnips put them in a tub and in you freezer the next time you make your own chicken stock, no need to uses fresh veg as you should have leftovers from before in you freezer.

The need to munch!

Non nom

Some days you just want a quick snack
I find this can meet with either the apple chips or these pastry circle
200g of gf self raising flour
100g of dairy free spread
4tbsp of Chilled water ( plus a little bit if needs it)
1 egg
40g mix sesame,sunflower and pumpkin

Mix the flour and the spread, when the dough is slowly coming together slowly add the water.
Once the dough has formed a ball it needs to be chilled for anyway between 15 – 30 minutes
Now preheat the oven to 180oC, you can now roll out the pastry and cut out the ‘cookies‘. Once the shapes have been cut transfer them to a lined cookie tray, Egg wash the ‘cookies‘, and sprinkle with the seed mix.

Cook for 10-15 mins until golden brown, this will depend on the ‘cookie,‘ thickness.

Cool before serving with dips or spreads I think (dear I say ) marmite ( I‘am in the love camp sorry)

Maltodextrin: Another swear word for ceoliac /gluten intolorance

I’ve notice Maltodextrin starting to appear in to my normally otherwise safe food,

On reading up on this ingredient, ( this is my way of understanding this ingredient, let me know if I am wrong) like flour it can be made out of a multitude of things.
Maltodextrin can be made our of potato, wheat and rice (and most properly other things too) It seems to be used as filler for white foods especially the cheaper end of the market.

The way I understand it is that it is optional to declair which one it has been made out, if the Maltodextrin is made out of a single food sort then it would read Maltodextrin (rice) , or Maltodextrin (wheat) , Maltodextrin ( potato) but if it States that the Maltodextrin is made from wheat then is should declaring that there is or maybe contain gluten.

It‘s a real mind field with this labled ingredience (I was caught out which this myself presently luckly I didn’t have any of it before I noticed it on the list)

Gluten Free Egg sandwich

I love food !

I occasional enjoy an egg sandwich I find it best with salad cream but this would change depending of the contents of the salad cream (the one I have is GF and DF )

What I used

  • GF /DF sliced Bread
  • Eggs
  • GF /DF salad cream or non dairy spread (to taste)
  • Salt & pepper to taste

What I did

  • Boil the eggs to hard boil (approx 8-10 mins)
  • Remove the shell
  • Mash up the egg and add about 2 tbsp of salad cream to the mix (you could add a DF /GF marg (about 2 tbsp)to the mix instead of the salad cream)
  • I also add a small bit of salt and pepper
  • Spread the mixture on top of 1st slice of bread and place the 2nd slice of bread on top of the mixture

Enjoy :), if you want you could also add a bit of greenery (like cress) in to the mix

Noodle Bolognese :)

I love Spaghetti Bolognese , but i am yet to ‘invest’ in GF spaghetti but I did find some GF rice noodle the other day so popped them in the basket and off i went to have a play and could see if used in this dish, I made it the similar way i would make it before the move away from naughty foods

What I used

  • Mince meat.
  • 1 jar of bolognese sauce (i can’t see the point of making your own if you can uses the one that is already availble cheaper than you can make it, sorry purists)
  • 1 tin of tomato
  • 1 squirt of tomato puree (about 1tbsp for the technical folks out there)
  • 1 tin of washed and drainned kidney beans
  • GF noodles (the ones i found where rice noodles)

What I did

  • Brown the mince meat in a pan/frying pan, While browning the meat, take the washed and drained kidney beans
  • Mashed the kidney beans up.
  • Once mashed add the browned mince (removing as much fat as possible ),
  • Add the jars, tins and puree to the mixture if it needes add a tinful of water to the mixture.
  • Bring to the boil and simmer until cooked.
  • Once your mince mixture is cooked start the noodles as per instructions on packet (don’t panic if the rice noodle’s cooking water goes cloudy).
