Slow cooker mince and tatties

Very simple recipe , slowly fry onion (or shallots in this case) in a frying pan . Add the mince to brown . Throw everything in the slow cooker (including the liquid). Also seasoned the mince and onion combo with mixed herb ,pepper and a about half a teaspoon on mild chilly powder

hi

Next I chopped /diced Carrots and Celery

Added them to the pot including 3 tins of chopped tomatoes and 3 tin full of water.

Simmer for about 2 -3 hours on the high setting

Then I add the magic ingredients of 2 tbsp of cornflour to help create a sauce for the mince. On adding the cornflour i find you need to turn the slowcooker to low so it doesn’t stick to the bottom of the pan.

Beef cobbler

This is another 1st for me

Mince sauce ingredience

750g of minced beef
2 garlic cloves
1 onion
2 tbspoon of flour ( I used rice flour this time)
500g beef stock or about 2 stock cubes
400g of tomatoes ( chopped or plum chopped up is fine)
2 tbspoon of tomato puree ( I really like tomato taste but can be reduced/removed)
150ml of boiling water
1 tbspoon of Worcestershire sauce ( or browning).

Cobbler/ pastry ingredience
225g gf flour
Pinch of salt & pepper
50g butter or dairy alternative
1 egg
3 tbspoon of milk.

Fry ( brown) the garlic and onions, put in the slow cooker, now brown the mince, drain off the fat and add to the slowcooker

Add all the sauce ingredience in to the slow cooker and cook for a few hours until ready ( with the smell that comes from the slow cooker you’ll know it’s cooks!

For the cobbler/pastry
Mix all the dry ingredience in to a bowl and rub in the butter to make bread crumbs, mix up the milk and egg, add to a well in the middle of the bread crumbs and mix together until a dough is formed, once your happy roll it out on to the works top to 1cm thick and cut out with small round (48mm) cookie cutters.

Add the cobblers to the dish about 20 minds before needing to serving.

St. Andrew‘s day

Ok so first I would like to apologies for not posting in the last couple of days. I had a bad food reaction to Puffed rice of all things ( but I can eat rice cakes from the same brand), also over did it with my running , and killed my back on a stupid bus seat.

Any way back to the matter in hand,
To day is St. Andrew’s day here in bonnie Scotland, so its haggies, neeps and tatties, but unfortunately I am yet to find plain oats that I tolerate ( I can eat oatcakes).

So a little searching on the old inter webs came up with this little website link,

I followed the recipe but left out the oats, not the same as good old haggis but I got to enjoy a great meal with my family, they got proper haggis

Haggis, neeps and tatties
yum yum
